Apricot Bar Recipe

Thank you, Beverly, for asking me where you might find the recipe! 

Here is the recipe for the Apricot Bars ala Giada
1 (13 oz) jar apricot jam or preserves
8 dried apricots, chopped
1 3/4 cups all purpose flour
1 packed cup light brown sugar
1 tsp ground cinnamon
3/4 tsp fine sea salt
3/4 tsp baking soda
1 3/4 cups old-fashioned rolled oats
1 cup coarsely chopped walnuts
16 TBS (2 sticks) unsalted butter, melted
1 large egg beaten, at room temp
1 tsp pure vanilla extract

Preheat oven to 350 degrees.  Spray a 9x13 baking dish with Pam. 

In a small bowl, mix the jam and apricots.

In a large bowl, whisk together the flour, sugar, cinnamon, salt and baking soda.  Stir in the oats and walnuts.  Add the butter, egg, and vanilla and stir until incorporated.

Using a fork or clean fingers (I used my fingers), press half of the crust mixture onto the bottom of the prepared pan.  Using a spatula, spread the filling over the crust, leaving a 1/2 inch border around the edge of the pan.  Cover the filling with the remaining crust mixture and gently press to flatten.

Bake for 30-35 minutes, until light golden.  Cool for 30 minutes to 1 hour.  Cut into bars and store in airtight container.
